Brussels Sprout Heaven!

Same lunch as yesterday but I changed the dressing for the sprouts. I wanted something completely different and not so sour/vinegary. So today it is:

Teriyaki Sauce (healthy kind – no high fructose corn syrup)
Tarragon Vinegar (again still out of rice vinegar)
Garlic Chili Paste (yum – HOT!)
Liquid Aminos
Sesame Oil
Molasses
Green OnionsΒ 

With all of the ingredients combined there was about 2 – 3 Tbs of dressing. Not too many calories at all but more than yesterday. I’d probably put everything at about 250 for the whole meal. How much does that TOTALLY rock?!?! :mrgreen:

Accountability & Calories

I’ve mentioned before that I need to lose 10 pounds. I finally put my bodybugg back on and I’m being really good about logging my food, so since I’ll know how many calories I’m burning I’ve decided to post daily what my calorie deficit was for the previous day. Eeeeeeekkkkk. The goal is 500.

I most certainly won’t make the goal everyday, but I’ll try. Don’t judge…Here’s the week’s totals so far:

Monday = Burned 1991 – Consumed 1723 = 268 deficit

Tuesday = Burned 1715 – Consumed 1573 = 142 deficit

Wednesday and Thursday totals will be reported on Friday, but we’re partying it up tonight so I’m expecting a surplus 😦

I’m pretty proud of the fact that I have a deficit at all considering I haven’t started working out yet 😳

That’s my New Year’s Resolution. Besides, I think if I want a 500 calorie deficit per day that’s the only way to do with without totally starving myself.

Coolest Recipe Ever!

I’m SOOOOOOO freaking excited about this!

It is a springroll wrapper from my local Asian grocery store. It’s made of Tapioca flour so it is wheat-free. It is not raw, but is only 25 calories, so probably isn’t damaging my meal nutritionally πŸ˜‰

They come hard and dry – resembling small white/transparent tortillas. To use they only need to be soaked in hot water for a few seconds. Voila! Ready to use!

If you’ve ever done any reading about Macrobiotics you know the importance of sea vegetables. So I found this product:

Furikake

The bottle is awfully curved but it says: “Toasted Sesame & Nori”. Ingredients: semame seeds, seaweed. That’s it. There is a lot of Furikake out there with all kinds of crap in it like MSG and sugar πŸ˜›

This is how the bottle describes itself: “Furikake in a Japanese household is as traditional as jam in an American home. It’s a flavor waker-upper for mainly steamed rice but its use is endless. While the basic blend is a simple sea vegetable and sesame seed combination, other ingredients add accents of sweet, salty, and crunchy notes for an exciting burst of Asian taste sensation.”

So for the filling I shredded raw brussels sprouts (possibly my fav veg of all time!). To it I added just a scant teaspoon of sesame oil to keep the calorie content down, chopped green onion, chili oil, tarragon vinegar (I would have used rice vinegar if I had on hand), and salt. It did marinate overnight, which I think makes a big difference. So simple but you would not believe how delicious!!!

I think you see where I’m going with this……It was all constructed at my desk. I was expecting a big messy production but it was far easier and cleaner than even making instant oatmeal πŸ˜€

I don’t know how appetizing this all sounds but I can assure you it was truly divine! If I had to very roughly estimate calories I’d say about 50. So you could eat 4 of them and still end up less than a low cal power bar!

Now I’m excited (in case you can’t tell) about all of the various fillings I can make. Definitely expect more spring roll posts :mrgreen:

Still Exploring

I haven’t posted anything in a loooong time. I guess it’s pretty easy to figure out that I haven’t been eating raw 😳

Not to make excuses here but because of certain circumstances, like the adoption and job change, the holidays, and just the fact that I don’t handle stress well and have a problem maintaining my weight I am now10 pounds heavier than I was at the beginning of the summer!!!

That means I put my bodybugg back on and get to business. I’d love to lose with eating 50% – 75% raw and that will be my goal. In the meantime I’ve been trying to eat healthy and today I made oatmeal. I added 1/2 banana, maca, flax meal, and goji berries:
